Chicken Spectacular and an award
What you don't know is you're looking at the world's best casserole.
Aptly named Chicken Spectacular, this dish is phenomenal. It's creamy, savory and easy for a quick wholesome dinner.
Margaret, a dear family friend and Ben's mom's best buddy, made it for us in Shreveport. When Ben's not whining for Beef Burgundy, he whines for this.
And I can see why. This isn't your average church lady casserole. It's good. And easy. My kinda meal.
I had no problem eating this for three days straight. Seriously.
Before you go making it yourself, I have to thank Michelle. She was kind enough to award me with the Proximity Blog Award.
Michelle is a fabulous blogger who likes my favorite things: pink, sparkles and critters! She's always making cool crafts and has a totally cool house decked out for Christmas.

And for now, the recipe for Chicken Spectacular!
Margaret's Chicken Spectacular
1 box of wild rice with 1 cup of white rice
1 can cream of celery soup
1 cup mayo
1 med. jar pimentos
1 can French cut green beans, drained
3 to 4 chopped boneless skinless chicken breasts
1 sm. can water chestnuts.
Onion powder or 1 med. onion chopped thin.
Cook rice according to directions. Mix onion, rice, soup, pimento, mayo, green beans and water chestnuts. Grease baking dish. Mix chicken with other mixture and bake for 30 minutes at 350 degrees.

Congrats on the award Duckie! I left you a couple on my blog today as well, but I can see you've already got one of them! That casserole is very similar to one I make up at the big house, except we put artichokes in it. Yummo!! I know I would love yours! Hope you're having a great day! XXOO

This dish does sound spectacular and has three words that are music to my eyes, quick, easy and delicious. Those Louisiana people sure can cook huh? lol
